In 2020, Yame took positions one through twenty at Japan's 74th National Tea Competition (全国茶品評会) in the Gyokuro category — all twenty top places, from 119 submitted products. That is not coincidence: Yame has won the 産地賞, the regional top prize for Gyokuro, 25 consecutive years. Fukuoka Prefecture now produces over 50% of Japan's Gyokuro by volume. Anyone thinking seriously about shaded green tea cannot look past Yame.

History: 1423 and what actually arrived

Tea cultivation in Yame began in 1423, when the Buddhist monk 栄林周瑞 (Eirin Shuzui, ca. 1390–1464) returned from Ming-dynasty China and brought tea seeds to the region. He founded the temple 霊巌寺 (Reiganji) in present-day Kurogi-machi (Kasahara) and taught the local landowner Matsuo Tarogoro Hisaie how to cultivate tea. This early introduction is well documented historically.

One important clarification: what arrived in Yame in 1423 was not Gyokuro or Matcha — it was 釜炒り茶 (Kamairicha), pan-fired tea in the Ming style. The shading techniques that produce Gyokuro and Tencha (the basis for Matcha) came centuries later, most likely during the Edo period, travelling from Uji to Kyushu. Claiming a "600-year history of Matcha in Yame" would therefore be misleading: tea cultivation reaches back 600 years; the Gyokuro and Matcha tradition is closer to 200.

Geography and climate

Yame sits in the south of Fukuoka Prefecture, enclosed between forested mountains and the river valleys of the Yabe (矢部川) and Hoshino (星野川), both tributaries of the Chikugo (筑後川). These valleys create a microclimate with pronounced temperature differentials between day and night, high humidity, and frequent morning mist. This directly affects the biochemistry of the tea leaves: cool nights slow photosynthesis, the leaves accumulate fewer bitter compounds and more theanine instead.

The soils are clay-rich and mineral-dense. Many producers work with traditional methods: compost fertilisation, rice-straw mulch, natural pest management.

The core of it: Tana-gake and the biochemistry of shading

The defining quality characteristic of Yame Dentō Hon-Gyokuro — the region's geographically protected premium product — is its shading method: 棚掛け (Tana-gake), a traditional frame structure draped with straw and reed mats over the tea plants. Most modern Gyokuro in Japan is shaded today using black synthetic nets. Tana-gake is more labour-intensive, filters light differently, and is widely considered the main reason for the softer, deeper flavour profile of traditional Yame Gyokuro.

The biochemistry behind it: under shading (typically three to four weeks before harvest) sunlight is reduced by 80–90%. Without sufficient light, the tea plant cannot convert theanine into catechins — catechins being the primary bitter compounds in green tea. Theanine accumulates in the leaf instead. Gyokuro typically contains 2–3% theanine by dry weight; Sencha around 1%. This explains the pronounced sweetness and Umami character of high-quality Gyokuro and Matcha from shaded cultivation.

Processing: from Tencha to Matcha

Matcha from Yame begins as Tencha: the Shincha harvest (late April to early May) is steamed immediately after picking to halt oxidation, then dried and stripped of stems and leaf veins. What remains is pure leaf flesh.

Tencha is stored cool and dark, often for several months, before being ground in traditional stone mills. These granite mills turn slowly — one hour of grinding yields roughly 30 to 40 grams of Matcha. The low rotation speed prevents heat build-up and preserves the volatile aromatic compounds.

Cultivars

While Yabukita dominates across Japan, many producers in Yame work with a broader range of cultivars. Saemidori delivers intense sweetness, creamy mouthfeel, and pronounced Umami — well suited to Usucha. Okumidori ripens later, developing a deep, grassy character with a stronger profile, good for Koicha. Asahi is rarer, with floral notes and a silky texture. Experienced tea masters blend these cultivars to achieve balanced, complex profiles — a craft refined over generations.

Preparing Yame Matcha

For Usucha: approximately 1–1.5 g Matcha into a Chawan, 70–80 °C water (around 70 ml), whisked briskly with a Chasen until a fine foam forms at the surface. Yame Matcha is sensitive to temperature: water that is too hot activates bitter compounds that, at this quality level, should be minimal — but are still present.

For Koicha, double the Matcha with less water, worked slowly into a paste-like consistency. In this form, the depth and sweetness of Yame Matcha come through most fully.

Recognising quality

High-quality Yame Matcha shows a vivid emerald green — a direct indicator of chlorophyll content and freshness. Brownish or yellowish tones point to ageing or lower quality. The aroma should be fresh and slightly sweet, with notes of fresh grass and steamed greens. In the mouth: sweetness and Umami in the foreground, a restrained bitterness as counterpoint, creamy texture, long finish.

Tasting different Matchas regularly sharpens the sense for these nuances — much like engaging with ceramics, where over time you begin to read the potter's hand in glaze and form.

Yame in Japanese tea culture

Uji stands for historical depth and imperial tradition; Nishio for industrial efficiency and volume; Kagoshima for innovation and new cultivars. Yame stands for craft and shading tradition — the competition results speak for themselves.

That competition dominance is specific to Gyokuro. Yame Matcha benefits from the same soils, the same climate, and the same shading methods, but it is a distinct product with its own history. Both share the same foundation: the precision of Tana-gake and the biochemistry of shading.
