The Premium Shin Kurotake Chasen is our new flagship whisk: a bit larger than our regular Kurotake Chasen, and with a few special touches. We had it custom made after one of our favourite Shin chasen from Takayama, for usucha, matcha lattes and daily use.

What Makes This Chasen Different

  • Size: 117 mm tall in total, which makes it taller than our regular Kurotake Chasen and gives you more reach in larger and deeper chawans.
  • Tines: about 70 extra-fine, flexible tines instead of the 60 on our regular Kurotake Chasen, which catch clumps and build foam quickly.
  • Handle: thin and slightly longer than on our regular Kurotake Chasen, so that you have more leverage and an ergonomic grip for swift and strong whisking.
  • Binding: the thread band around the tines is woven in UNEARTHED deep blue with a thin coral red stripe in the middle, a colour combination we chose for this whisk.
  • Packaging: every whisk comes in a paper cylinder that we designed ourselves, printed on textured beige paper with a drawing of the chasen.
  • Material: hand-made from black bamboo (kurotake), with a natural finish and no lacquer.

Why We Picked It

Like most whisks sold worldwide, this chasen is made in China by a specialist workshop, because the traditional workshops in Takayama cannot meet the demand. It is the best premium quality we have found at a reasonable price.

How to Use

  1. Soak the tips in warm water for 30 to 60 seconds before whisking.
  2. Sift the matcha and add water at 70 to 80 °C.
  3. Whisk in quick M or Z motions (not in circles) for 15 to 25 seconds, until the surface is glossy with a fine foam.
  4. Rinse the whisk, shake off the water and let it air-dry on a whisk stand (or handle-up in a ventilated spot).

Care

  • Before the first use, soak the tines in boiling water a few times to remove any leftover natural bamboo scent.
  • Do not put it in the dishwasher and do not boil it in a pot.
  • Do not store it wet in a closed container, and this includes the paper cylinder.
  • A new whisk may release a faint natural colour on the first rinse, which is normal.
  • Replace it when the inner core loosens significantly or the tines lose their spring.

Good to Know

  • It works well in larger chawans and in a katakuchi or whisking pitcher.
