Ceremonial grade is a marketing term, not a legal or certified standard — no official body grades Matcha this way in Japan or the EU. It loosely signals Matcha smooth enough to drink straight, whisked with water, as opposed to culinary Matcha for lattes and baking. What actually matters is cultivar, shading, stone-milling, colour, and origin.
"Ceremonial Grade Matcha" appears on a lot of packaging. It sounds like an official classification — something with a defined standard, a certification body behind it. But the term has no legal definition in Japan, the EU, or the US. It was coined around 2010 by Western importers as a marketing category to differentiate their product from culinary-grade Matcha.
That isn't automatically a problem. The term has settled into use as a quality signal, and many producers mean something real by it: first-flush Tencha, stone-ground, significantly higher theanine content than commodity powder. But without an understanding of what genuine quality criteria look like, "Ceremonial Grade" is nothing more than a self-declaration — one that can just as easily be printed on mid-range Matcha.

What Japanese tea producers actually classify
Japan has JAS quality grades (Japanese Agricultural Standard) that regulate various tea categories. The highest tiers are called toku-jo (特上, "special superiority") and jo (上, "superiority"). Neither is called "ceremonial grade" — the term simply does not exist within Japanese classification.
What does exist: the informal but stable four-tier system of 最高級, 上級, 中級, and 業務用, which I've described in detail elsewhere. The quality tier Western vendors call "Ceremonial Grade" corresponds roughly to the top two Japanese categories — but says nothing about whether the tea was ground on a stone mill or an industrial grinder.
The Japanese quality tiers in detail
Any serious conversation about Matcha quality runs through these four tiers. They are widely understood among Japanese producers and tea merchants, even if no official body prescribes them in a single unified standard.
最高級 (saikōkyū) — Absolute highest quality: First flush, ideally late April to early May. Hand-picked, selecting only the three to four youngest leaves per shoot. Single-Cultivar, no blends. Stone-ground on granite wheels. This tier produces Matcha with the highest L-theanine content, deep neon green, zero perceptible astringency, and a long, sweet Umami finish. In the West, this corresponds roughly to what reputable vendors call "Ceremonial Grade" — though that label is applied far more loosely than this tier warrants.
上級 (jōkyū) — Premium: Also first flush, but often blended from multiple fields or growing plots. Stone-grinding is standard, quality control is high, but picking criteria are less strict. The difference from saikōkyū is noticeable in a direct comparison but small in everyday use. Excellent for both Usucha and Matcha lattes. Western equivalent: "Premium Grade" from transparent vendors.
中級 (chūkyū) — Mid-grade: This is where compromise begins. Often second flush (June), which means more catechins, less theanine, and noticeably more bitterness. Impact mills rather than stone mills are common at this tier. The colour tends toward a more muted green. Suited for cooking, smoothies, and baking. Western equivalent: "Café Grade" or "Daily Grade."
業務用 (gyōmuyō) — Commercial/Industrial: Raw material for food manufacturing — ice cream, chocolate, cosmetics, ready-made drinks. No harvest or cultivar information is typical. Industrial grinding, often with significant heat generation. The price is in the single-digit euro range per 100 grams. Any package that undercuts that price while still claiming "Ceremonial" comes from here. Western equivalent: "Culinary Grade" or "Cooking Grade."
The mapping: saikōkyū ≈ "Ceremonial", jōkyū ≈ "Premium", chūkyū ≈ "Café Grade", gyōmuyō ≈ "Culinary/Cooking." The problem: this equation only holds with vendors who are honest about their source material. Most are not.
The decisive process: stone mill versus impact mill
The single most important genuine quality indicator — and the one least likely to appear on packaging — is the grinding method.
Traditional granite stone mills (石臼, ishiusu) rotate at 30–40 revolutions per minute. The frictional heat generated is minimal: grinding temperature stays below 40 °C, the threshold at which chlorophyll oxidises into pheophytin — the brown pigment that makes Matcha look dull and taste flat. Below that temperature, L-theanine and volatile aromatic compounds are also largely preserved.
Industrial impact and ball mills run at 3,000 or more revolutions per minute. Heat generation is significantly higher; particle size varies more; the suspension in water is less homogeneous. The result tastes and looks different — less green, less velvety, less complex on the finish.
A granite stone mill produces roughly 30–40 grams of Matcha per hour. For a 30 g tin of premium Matcha, the mill ran for an hour. That is why genuinely stone-ground Matcha costs more — not prestige, but time and capacity.
Cultivar influence on quality
Not every tea plant is suited to top-grade Matcha. The cultivar — the specific variety — is a decisive quality factor that almost never appears on Western packaging.
The four most important Cultivars for premium Matcha are Okumidori, Saemidori, Samidori, and Asahi. All four are naturally high in theanine, produce a deep green, and deliver a round, Umami-forward flavour. Okumidori breaks two weeks later than the dominant standard cultivar Yabukita, which allows the leaf structure more time to develop — the result is a particularly fine, low catechin-to-theanine ratio.
Yabukita (やぶきた) is by far the most widely cultivated tea cultivar in Japan — roughly 70–75% of the country's total tea acreage. It is hardy, high-yielding, and early-breaking. For Sencha it is excellent. For top-tier Matcha it is problematic: Yabukita has a comparatively high catechin profile, which leaves a noticeable astringency even with optimal shading. Decent Matcha from Yabukita is possible — but it rarely reaches top-ceremonial quality.
Why does the cultivar matter more than the grade label? Because a vendor can print "Ceremonial Grade" on a first-flush Yabukita and not technically be lying — but what ends up in the cup is structurally different from the same label on a first-flush Okumidori. If you can't find the cultivar on the package, you don't know what you're buying.
Price and what justifies it
"Why does good Matcha cost so much?" is a fair question — and it has a concrete answer.
Start with the stone mill: a granite grinding wheel produces 30–40 grams of Matcha per hour. That is not an error — it is the physical reality of the technology. Over an 8-hour run, that yields 240–320 grams. Eight hours of machine operation, monitoring, quality control, and cleaning — for under 300 grams of finished product.
Then there is the raw material: premium Tencha (the unground leaf used for Matcha) fetches between ¥30,000 and ¥80,000 per kilogram at Japanese auctions — roughly €190 to €500. For the top quality required for saikōkyū Matcha, the upper half of that range is realistic.
Then there is the cultivation itself: Matcha fields are shaded for 20 to 30 days before harvest — traditionally with hemp mats, more commonly now with plastic-film structures. The infrastructure is substantial, the work seasonal and not mechanisable. Hand-picking the tender first leaves: experienced pickers manage roughly 1 kilogram of fresh leaf per hour. From 4 kilograms of fresh leaf, steaming, drying, and destemming (Aracha → Tencha) yields approximately 1 kilogram of Tencha. The destemming process alone removes 40 to 50% of the leaf weight — only the soft blade without stem and veins is used.
What does this mean for the final price? Genuine Ceremonial-grade Matcha — first flush, stone-ground, premium cultivar — cannot be cheap at the producer level. In Germany, the floor price for authentically produced retail Matcha is around €1 per gram. For a 30 g tin, that means €30 and up.
The corollary: if a 100 g package is marketed as "Ceremonial Grade Matcha" for €15, every alarm should go off. At €0.15 per gram, there is no stone grinding, no premium cultivar, no first-flush Tencha — regardless of what the label says. The price signal is more reliable here than any marketing claim.
The colour test: seeing what you're buying
No tool reveals Matcha quality as directly as a white sheet of paper. Dust a small amount of dry Matcha onto it and observe:
Vivid neon green: high chlorophyll content, first flush, well stored. The powder should look like freshly crushed pistachios — almost unnaturally green.
Olive green or yellowish-green: oxidation, later harvest, or storage under the wrong conditions (light, heat, oxygen exposure).
Grey-green or browning: old stock or industrial grinding with heat development.
This test is reliable and costs nothing. L-theanine and chlorophyll degrade in parallel — a vibrant green indicates that both are still present.
Growing regions: Nishio, Uji, Kagoshima — and what sets them apart
Three regions dominate the premium Matcha market in Germany:
Nishio (西尾, Aichi): Japan's largest Matcha production site by volume. Nishio Matcha is round, sweet, creamy — accessible, consistent, and less complex than the best Ujis. Aiya, one of the world's largest Matcha exporters, comes from here. A solid reference point for the baseline of the quality segment.
Uji (宇治, Kyoto): The historic reference region. One important detail: "Uji Matcha" as a GI-protected designation permits Tencha sourced from Kyoto, Nara, Shiga, Mie, and Kagoshima — as long as the grinding takes place in Uji. Most products sold in Germany as "Uji Matcha" are blends. Genuine, locally grown Uji Tencha is far rarer — and significantly more expensive.
Kagoshima (鹿児島): The fastest-growing Matcha region. More sunshine hours than Kyoto, more robust harvests, a lively green profile with a slightly vegetal character. Very well suited to lattes and cold drinks. Several premium producers in Kagoshima work with Saemidori or Okumidori Cultivars under intensive shading.
Marukyu Koyamaen as a benchmark: why transparency matters
Marukyu Koyamaen (丸久小山園), founded in 1704, is the producer on which I anchored my own sourcing decision. The company is the official Matcha supplier to the Urasenke tea school, one of the three major schools of Japanese tea ceremony. For all premium products, they disclose cultivar, grinding method, and place of processing.
Our three Matchas — Soju (蒼寿), Meiju (明寿), Oju (欧寿) — are all Okumidori-dominant, stone-ground on granite, from the first flush. The Okumidori cultivar was registered in 1974; it breaks 7–14 days later than Yabukita, yet produces higher theanine levels and a deeper green. It is one of the few Cultivars that delivers top-quality results for both Gyokuro and Tencha/Matcha.
The difference between Soju, Meiju, and Oju is not one of origin but of nuance in picking timing and blending: Soju is the most accessible entry point; Meiju is somewhat more complex; Oju was developed specifically for the European market — slightly rounder, less grassy, pleasant with milk.
Shelf life and freshness: what actually matters

Unopened, nitrogen-flushed: 12 months from the fill date. Nitrogen flushing displaces oxygen from the tin — the primary driver of oxidation. As long as the tin remains sealed and is stored cool and dark, quality remains stable.
After opening, refrigerated (5 °C): 6 to 8 weeks at peak quality. Refrigeration slows oxidation significantly. One important point: never open the tin directly from the fridge. Allow it to acclimatise to room temperature first — 10 to 15 minutes — before removing the lid. Otherwise, moisture condenses on the powder, causing clumping and accelerated deterioration.
After opening, room temperature: 2 to 3 weeks before quality loss becomes clearly perceptible. Chlorophyll oxidation begins immediately — the vivid neon green gradually shifts toward olive, the aroma flattens, and the Umami note dulls.
The colour test is useful here again: fresh Matcha has an almost surreal neon green; ageing Matcha shifts toward olive or yellow. This colour shift is not a cosmetic issue — it indicates substance loss, as chlorophyll and L-theanine degrade in parallel.
This is also why 30 g tins exist. A 30 g tin yields around 15 cups of Usucha — at daily consumption that's two weeks; at moderate consumption, a month. That is the ideal rate of use for fresh Matcha. Someone who drinks Matcha infrequently and buys a 100 g package to save money loses more through quality degradation than they gain from the lower per-gram price. Buying smaller quantities more often is the more economical decision.
Preparation: technique over equipment
Good Usucha — the classic thin bowl of Matcha — requires no expensive equipment. What it does require: correct water temperature (70–80 °C, not 95 °C — boiling water scorches the aromatics and amplifies bitterness), a sieve to sift the powder beforehand (prevents clumping), and a decent Chasen with at least 80 prongs.
Dosage: 2 g of Matcha to 70–80 ml of water — roughly 1.5 Chashaku scoops. Using too much powder is a common mistake; more Matcha does not mean more flavour, it means more bitterness and a worse suspension.
On water quality: soft water (under 50 mg/L total hardness) extracts Matcha best. Munich tap water sits at 100–150 mg/L — it is worth using filtered water or a still mineral water with low calcium content.
Storage: what actually matters
Matcha is sensitive. The enemies: oxygen, light, heat, moisture. Practical guidance:
— Unopened, nitrogen-flushed: shelf life of 12 months.
— After opening: transfer immediately to an airtight metal tin, refrigerate at 5 °C, and use within 8 weeks.
— When removing from the fridge: allow the tin to reach room temperature before opening — this prevents condensation on the powder.
