Uji (宇治) is where Japanese tea culture became what it is today. South of Kyoto, where the Uji, Kizu, and Katsura rivers converge, this valley is not only Japan's most historically significant tea region — it is where a Chinese import became a distinctly Japanese system.

But what "Uji Matcha" means on a label is more complicated than most buyers realise. And to understand Uji Matcha properly, you have to start with that complexity.

Geography and microclimate: why Uji works

The city of Uji itself sits at roughly 40 metres above sea level — but the tea gardens in the surrounding mountains, in Wazuka and Minami Yamashiro, lie between 200 and 400 metres. The Uji River carries water from Lake Biwa, Japan's largest freshwater lake. That river actually carries three names: Seta-gawa at the lake's outlet, Uji-gawa through the valley, and Yodo-gawa down to Osaka — the same water, three designations.

The convergence of three rivers produces regular spring-morning ground fog: temperature differentials between warm valley air and cool river water condense into mist that covers the young shoots and acts as a natural light diffuser. Under these conditions, Uji plants accumulate somewhat higher levels of theanine even without artificial shading — for Tencha, the artificial shading then adds further to that effect. That is the real geographical advantage of Uji: not "good soil," but a valley microclimate with built-in light conditioning.

Wazuka: the real heart of Uji tea growing

Anyone who wants to see the tea fields that produce Uji Matcha does not go to the city of Uji — they go to Wazuka (和束). This mountain village sits at 200 to 400 metres, roughly 30 kilometres south-east of Kyoto, and is today the most productive tea-growing area in the prefecture: around 800 hectares of tea gardens accounting for approximately 40 percent of Kyoto's total tea production.

What sets Wazuka apart from other growing areas is its topography. The fields are terraced into hillsides — often on gradients too steep for mechanical harvesting. That forces handwork, limits yield, and ensures a level of care that is difficult to replicate on flat industrial plots. The visual signature of Wazuka is these green stepped fields carved out of cedar forest: in spring, when morning mist fills the valleys and the new growth is luminous, the slopes look like a study in natural composition.

Nagatani Soen and the Sencha revolution

In 1738, a tea farmer from the village of Yuyadani in Yamashiro fundamentally changed Japanese tea production. His name was Nagatani Soen (永谷宗円). The method he developed is known today as the "Uji process" (宇治製法): steam fresh tea leaves, roll them, dry them.

The significance of that only becomes clear in historical context. Until the mid-eighteenth century, much of Japanese tea was pan-fired in the Chinese manner — Kamairicha. The result was a brownish, mildly savoury tea. Nagatani Soen's steaming method changed everything: the green of the leaf was preserved, the aroma became fresher, brighter, more vivid. This tea looked like something new — because it was.

The economic pressure was real: inexpensive Chinese tea dominated the market, and the Yamashiro region was losing ground. Nagatani Soen's innovation rescued the commercial relevance of Uji tea by creating a product that was clearly distinct from Chinese teas and established its own quality category. He sold his Sencha for the first time through Yamamoto Kahei in Edo — present-day Tokyo. The Yamamoto family is the same one that would later play a central role in developing Gyokuro.

Nagatani Soen is honoured today in Ujitawara (宇治田原) with a shrine — a rare distinction for a tea producer in a country where tea history tends to be passed down institutionally rather than personally.

The Kanbayashi family and Tencha processing

Matcha arrived in Japan from China in the twelfth century, introduced by the monk Eisai (1141–1215). The Tencha processing that forms the foundation for quality Matcha developed in Uji over several centuries. The Kanbayashi family (上林) was among the most influential tea producers in the region from the sixteenth century onward and contributed significantly to the refinement of this technique.

The defining technical feature of Tencha is flat-drying: after steaming, the leaves are not rolled. Rolling would destroy the chloroplasts and compromise the bright colour. Stems and leaf veins are removed before the pure leaf material is ground on granite millstones.

The protected-origin trap: what "Uji Matcha" actually means

This is where the conversation that many Matcha suppliers would rather avoid begins. The definition of "Uji Matcha" set by the Kyoto Tea Industry Association (京都府茶業会議所) permits the use of Tencha leaves from four prefectures — Kyoto, Nara, Shiga, and Mie — provided the final processing (milling and blending) takes place in the Uji region. This definition has existed since 2004; it is not a formal MAFF geographical indication, but an industry agreement.

In practice, that means: almost no Matcha sold in Germany as "Uji Matcha" comes entirely from the Uji valley. Most products are blends whose Tencha leaves originate from various regions and were milled in Uji. That is legitimate practice — economically necessary for volume producers. But it means the name "Uji Matcha" says very little about the actual origin of the leaves.

What really matters is producer transparency: which company made the Matcha? Which Cultivars? Which harvest? Producers like Marukyu Koyamaen (丸久小山園, founded 1704) disclose this information — that is the exception, not the rule.

The Uji blending system: the craft of assemblage

What truly distinguishes Uji from other tea regions is not only the quality of the raw leaves — it is centuries of expertise in blending. The specialist term for this is 合組 (gōgumi), and the masters of the craft are called 合組師 (gōgumishi). Their task: to combine Tencha from different fields, harvests, and Cultivars so that the finished product tastes the same year after year — regardless of how good or difficult any individual harvest was.

The closest analogy is Champagne production. There too, the priority is not the expression of a single vineyard or vintage, but assemblage: the reproducible character of a house, built from hundreds of individual components. An experienced gōgumishi at Marukyu Koyamaen tastes several hundred Tencha samples each season — from their own fields, purchased lots, different terroirs and degrees of maturity — and constructs the blends that will appear on the shelf as Soju or Meiju.

This matters because it raises a fundamental question of philosophy: blending versus Single-Origin. The classic Uji Matcha as the great houses produce it prioritises consistency. A Matcha from a Single-Cultivar — such as our Okumidori — prioritises the opposite: terroir transparency, the precise legibility of a specific leaf from a specific growing context. Both approaches are legitimate. But they answer different questions.

The Uji producers: who stands behind the name

Two houses shape the international image of Uji Matcha more than any others.

Marukyu Koyamaen (丸久小山園) has been based in Ogura since 1704 — a district of Uji situated directly on the river of the same name. The company is the principal supplier to the Urasenke school (裏千家), one of the two main lineages of the Japanese tea ceremony, and communicates openly about cultivar, milling method, and origin. The three UNEARTHED teas — Soju (蒼寿), Meiju (明寿), and Oju (欧寿) — all come from this house, all stone-milled, all documented to cultivar level.

Ippodo (一保堂) was founded in 1717, just thirteen years after Marukyu Koyamaen, and has its roots in Kyoto. The house runs its own shops in Kyoto and Tokyo and has a stronger presence in Japan as a consumer brand. Internationally, Ippodo is particularly well known for its structured Matcha hierarchy and its deliberately didactic communication around quality grades.

Beyond these two, there are dozens of smaller family operations in Uji and Wazuka working with two or three stone mills, farming their own gardens, and often selling their Matcha only regionally or through specialist distributors. Some of these producers make the most interesting Single-Cultivar teas — but without marketing budgets or international distribution, they remain nearly invisible outside Japan.

The structural reality: the majority of Japan's premium Matcha — even when the Tencha grew in Kagoshima, Mie, or Shizuoka — still passes through Uji. The blending expertise, infrastructure, and brand history of the great houses are concentrated here. Uji is less a growing region than a processing and quality centre.

Shading: technique, timing, and biochemistry

Tencha plants destined for Matcha are shaded more intensively than almost any other green tea: typically 20–30 days before harvest, with 85–95 percent light reduction. The method is called ōishita (覆下) — literally "under the cover." The biochemical mechanism is precise: under light deprivation, the plant suppresses the conversion of L-theanine into catechins. The result is a leaf with significantly elevated theanine content and reduced catechins — less bitterness, more Umami, higher natural sweetness.

In the final weeks before harvest — early to mid-May in Uji — the leaves grow almost entirely in the direction of theanine accumulation and are so deep green they appear almost black. After picking, steaming, and flat-drying, only the purest leaf material remains for milling.

The stone mill: why speed matters

Grinding on granite millstones (ishiusu) is the last and most time-intensive step in Matcha production. A stone mill turns at roughly 30–40 revolutions per minute — deliberately slow, so that frictional heat does not damage the delicate aroma. At that pace, a single mill produces approximately 30–40 grams of powder per hour. One kilogram of quality Matcha therefore means 25 to 33 hours of milling time on a single mill — which immediately explains the price structure for genuine stone-milled Matcha.

Industrially impact-milled Matcha is processed faster, but the higher heat generated compromises the volatile aromatic compounds — and under a microscope, the powder is coarser and less homogeneous.

Recognising authenticity: three practical criteria

How do you identify good Uji Matcha without knowing the producers personally? Three criteria:

1. Colour: Genuine first-harvest Tencha Matcha is vivid, almost neon green. Spread on white paper, the powder should look immediately vibrant — not olive, not yellowish. Faded or brownish tones indicate oxidation or a later harvest.

2. Aroma: Fresh premium Matcha smells green, marine, lightly sweet — not dry and grassy, not musty. The aroma should be clearly perceptible directly after opening a sealed tin.

3. Texture: Genuine stone-milled Matcha is velvety and fine; it settles evenly when sifted and does not immediately clump. Impact-milled Matcha has a slightly coarser, less homogeneous texture.

The future of Uji: climate change and quality pressure

Uji faces concrete challenges. Spring temperatures are rising — harvest windows are shifting, and the natural fog periods that historically defined the valley are becoming less predictable. Some producers are responding with adapted shading systems; others are relocating parts of production to higher elevations or cooler regions.

At the same time, the international market is growing faster than the region's capacity. That drives up prices for genuine Uji tea, while the market is flooded with cheaper products carrying the Uji label. A producer who communicates openly about cultivar, milling method, and origin has nothing to hide — and that remains the best selection criterion.
