Matcha Sensorics: Tasting of our entire Matcha line-up (10.10. 15:00-18:00)

Our Matcha Line-up is growing almost every second month or so. It's really hard to keep track of all the various flavors and profiles, so we decided that on October 10 we taste our whole matcha library in one afternoon: 15 matcha, including new lots that have not been in the shop before, poured side by side. Before the first bowl there is a short theory block on how matcha is actually evaluated, and how we can actually describe it, a system we will then use on every single sample.
- 15 matcha from our current range, from the everyday Kagoshima to the hand-picked single cultivars, plus new lots that have not been in the shop before
- A theory block of about 30 minutes: why a tasting needs a goal, why descriptive analysis and liking are two separate judgements, and why two people can honestly score the same bowl differently
- The evaluation system we use for the whole afternoon: four axes scored from 0 to 5 for umami, bitterness, sweetness and body, plus a maximum of three flavour notes from a fixed list, so that the sheets stay comparable
- A shared vocabulary that is tied to what is in the bowl: ooika, the aroma of shade that is closest to nori in English, edamame and sweet pea for the green notes, cashew, chestnut and cocoa for the roasted ones, butter and avocado for texture
- Time intensity, which means we follow a sip from entry over the mid-palate into the finish, and you will learn to wait about 30 seconds to see whether a bitterness resolves into sweetness or stays where it is
- Several Matcha are poured side by side, because that is what makes two cultivars distinguishable
- Some of the matcha will be in two formats, pure and in milk, because dilution and fat change a matcha more than most people expect
- Your own sheet to take home, and the consolidated results of the whole room by email afterwards (we will just make a picture of everyone's sheet for finding the right descriptors)
