Quick answer — what is Uji matcha?

Uji matcha is matcha from the four prefectures of Kyoto, Nara, Shiga and Mie that is finish-processed inside Kyoto Prefecture by a Kyoto-based tea business. This definition was adopted in 2004 by the Kyoto Prefectural Tea Industry Research Council. So “Uji matcha” is a trade definition about where the tea is finished — not one small growing region.

The deeper reason Uji matters is genetic. The Uji zairai (在来, seed-grown landrace) gene pool produced most of the cultivars premium Japanese matcha is made from — Asahi, Samidori, Gokou, Ujihikari and Asatsuyu — including plants now grown far outside Kyoto. When you drink good matcha from anywhere in Japan, you are probably drinking a plant that Uji found.

"Uji tea" is a definition, not a birthplace

Most guides answer "what is Uji matcha" with "matcha from Uji, the historic region near Kyoto." That is not wrong, but it is not what the words mean in the trade.

In 2004, after Japan tightened its food-labelling rules, the Kyoto Prefectural Tea Industry Research Council wrote down an official definition. In short:

Uji tea is tea from the four prefectures of Kyoto, Nara, Shiga and Mie — the regions that grew up together as the Uji tea area — that has been finish-processed (仕上げ加工) inside Kyoto Prefecture by a Kyoto tea business. Kyoto-grown leaf is given priority.

Read that carefully, because it has two consequences most buyers do not expect:

  • Leaf grown in Mie and milled in Kyoto is legally Uji matcha.
  • Leaf grown in Uji city and milled in Shizuoka is not.

"Uji matcha" also has no GI (geographical indication) protection. Japanese teas that do hold a GI include Yame Dentō Hongyokuro and Fukamushi Kikugawa-cha. Uji's four-prefecture definition is part of why a GI is hard to get — a geographical indication needs a geography, and this definition is deliberately not one. There have been counterfeit "Uji matcha" goods abroad, and Kyoto's tea trade had to fight to invalidate a Chinese "京都宇治" trademark.

None of this is a scandal. The definition is honest trade practice, and those four prefectures really did develop as one region over centuries. The point is simpler: the label on the tin describes a supply chain, not a field. So if the name does not guarantee the field, what does Uji actually give you?

Before cultivars, there were no cultivars

Until the 20th century, every tea garden in Japan was grown from seed. The Japanese word is 在来 (zairai) — "in the ground," the local seed-grown population.

Here is the part most articles skip, and it is the whole key to Uji. Tea (Camellia sinensis) is self-incompatible. A tea flower will not set good seed with its own pollen; it has to be fertilised by another plant. So every seed is a new genetic mix, and every bush in a seed-grown garden is its own plant — siblings, not copies. A zairai garden is not a variety. It is a population. Walk through one and the bushes differ in leaf shape, colour, vigour, budding date and taste.

A modern cultivar garden is the opposite: one plant, cloned by cuttings, repeated thousands of times. Same budding date, same picking date, same cup. That uniformity is why cultivars won — but it is also what a zairai garden has that a cultivar garden can never have.

And this is not only romance. When researchers read the DNA, Uji zairai stands apart. A 2019 study using ddRAD-seq sorted Japan's tea into a few genetic groups, and the Uji landrace forms its own distinct lineage — separate even from other Japanese landraces, which fits the idea that it came from China by a different route. A second study found Kyoto's landraces cluster together and other Japanese landraces sit near them — genetic support for tea having spread outward from the Kyoto region. Modern cultivars, by contrast, sit on a narrow family tree centred on one plant, Yabukita.

We will be honest about the limit here: no one has published a single clean number for how much diversity was lost. What the DNA shows is the shape — a distinct old lineage on one side, a narrow modern pedigree on the other. And that old lineage is disappearing for real. Nationally, seed-grown zairai is down to roughly 3% of Japan's tea area. In Kyoto Prefecture the zairai gardens were 54.4 hectares in 2023, and fell about 10% in that single year. In Uji city itself, zairai went from about 150 hectares in 1960 to about 20 by 2000.

The cultivars were not bred. They were found.

This is the best story in Japanese tea, and it is almost untold in English.

There was no crossing programme. Two farmers and one prefectural institute walked working tea gardens and noticed individual bushes that were better than their neighbours — then cloned them.

Hirano Jinnojō began around 1931, in Uji. He was the first person to attempt cultivar selection anywhere in the tencha and matcha world, and he opened Uji's first dedicated cultivar garden. His selections include Asahi (朝日), still one of the noblest tencha plants. Koyama Masajirō began around 1934 in the next village and worked together with Hirano; his best-known selection is Samidori (さみどり), which is still behind a great deal of top competition-grade matcha. The Kyoto Prefectural Tea Research Institute, working from the same landrace gardens, selected Kyomidori, Asagiri, Gokou and Ujihikari.

One detail is worth keeping. Kyomidori (きょうみどり) was selected from a bush in the garden of Nakamura Tōkichi — a tea house founded in 1854 and still trading today. The bush was already about a hundred years old when they took it, in 1940. A century-old plant in a merchant's garden became a cultivar.

These four Institute plants, together with Hirano's and Koyama's, became Kyoto's recommended tencha varieties in 1954. That is the date on the official record. The 1930s is when the two farmers started walking their fields.

Twenty-three years of trials to name four plants

The selection was slow and careful, and the shape of it matters more than "they picked some good bushes."

The Institute had been surveying Uji's zairai gardens since it opened in 1925. From that survey it chose 106 individual bushes. From the 106 it narrowed to 20 lines. Those 20 went into a comparative trial that ran until 1962 — and Hirano's and Koyama's private selections were entered into the same trial, competing directly against the Institute's. In 1953, exactly four were named.

Twenty-three years of trials to name four plants. That is the real tempo of tea breeding, and it is worth remembering in a time when everything is sold as "accelerated."

What ended seed-grown Uji was not the selection. It was a copying technique. In 1964–65 the Institute worked out a waterless cutting-propagation method that made it practical to clone a chosen bush at scale. The effect is visible in one number — the share of Kyoto's tea gardens planted to named cultivars:

Selecting a superior bush is useless if you cannot copy it. The cutting method is what turned found plants into planted cultivars — and it is what ended zairai as the Uji norm. We should say the trade-off plainly: we got much better and much more consistent tea, and we paid for it in genetic diversity. The same technique that saved the best individuals erased the population they came from.

The living archive — and what is honestly lost

The Institute keeps a genetic-resource and scion garden (遺伝資源園・採梢園) with selected old line-trees. It is a designated property of the Japan Heritage site "Japanese Tea: an 800-Year Historical Walk through Kyoto and Yamashiro." You can visit it — the Institute at Shirakawa, Uji, takes booked group visits and holds a public open day each year around the eighty-eighth night of spring.

And here is something no matcha guide will tell you, because it is a gap rather than a fact: the list of those 20 original lines is not published anywhere. Not on the Institute's own site, not in its 2025 centenary history, not in the national tea-research archive. Only one of the 20 is individually documented — Kyomidori — in the 1954 report. The rest were dropped after the trial and never written up. They are, in the plain sense of the word, lost.

Two Uji landraces did survive in the field, and both are worth knowing:

  • Oku-no-yama (奥ノ山) — the only one of the "Seven Famous Gardens of Uji" that never died, kept by Horii Shichimeien. When it was replanted in 1981 they screened its ~1,500 zairai bushes down to two, and after more years of trial registered them in 2002 as Narino (tencha) and Okunoyama (gyokuro). About twenty years, start to finish.
  • Asahi-en (朝日園) — thought extinct, then old bushes were found on the grounds of Kōshōji temple in Uji. Kyoto Prefectural University ran DNA analysis: the trees are landrace, and every sample fell inside the Kyoto zairai group. About 1,000 seedlings were planted out on the hillside behind the temple from 2023 — grown from seed as well as cuttings, seed on purpose, because seedlings live longer.

The person who found and restored Asahi-en is Matsubayashi Hōsai XVI, the 16th-generation Asahiyaki potter — whose kiln was given its name, 「朝日」, by the tea master Kobori Enshū, after that very garden. A potter is restoring the tea garden his kiln is named after, and sequencing the plants to prove it. For a gallery that lives between ceramics and tea, that is not a footnote. It is the whole point.

So why is Uji matcha actually good?

Four honest reasons, in the order they actually matter.

1. The plants

Asahi, Samidori, Gokou, Ujihikari, Asatsuyu — the tencha shortlist is overwhelmingly Uji landrace selections. This is Uji's real and lasting contribution. What "a matcha cultivar" means shows up in the chemistry: under shade, a high-umami cultivar carries much more theanine — the amino acid you taste as sweetness and body — and less of the bitter catechin EGCG than a commodity plant. In NARO's measurements of shaded tencha, a purpose-bred cultivar held theanine at 2.57 g/100g against 1.66 for Yabukita, with the bitterness running the other way. (Those two numbers are for the cultivar Seimei versus Yabukita; per-plant figures for the five Uji cultivars are simply not published, and we will not invent them. The point is the mechanism: the plant and the shade together are what put umami in the bowl.)

2. The craft

Roughly 800 years of continuous tencha practice, concentrated in one trade: shading (覆下栽培), the tencha oven, stone milling, and the blending skill of the chashi, the tea master who marries many lots into one consistent tin.

3. Terroir, weighted honestly

River fog, the Uji basin, cool nights. Real, and it helps — but smaller than the marketing suggests, and not exclusive to Uji.

4. Institutional depth

A prefectural research institute that has worked on exactly this since 1925, plus a living gene bank a short drive from the shops.

And then the twist that closes the loop. Uji's plants did not stay in Uji. Several nationally registered cultivars were bred from Uji landrace seedlings outside Kyoto entirely — Asatsuyu, for one, was raised at Kanaya in Shizuoka. Asatsuyu, an Uji plant, now has a large share of its national acreage in Kagoshima — the prefecture that has overtaken Kyoto in tencha volume (in 2023, Kagoshima produced about 38% of Japan's tencha to Kyoto's 23%). Uji's genetics are growing in everyone else's fields. The place gave the plants away — which is exactly why the place still matters.


A note from the founder: the case for breeding again

The section above is the sourced history. This part is opinion — mine.

Write out the plants that premium Japanese matcha is actually made from and the list is embarrassingly short. Asahi, Samidori, Gokou, Ujihikari, Asatsuyu, Kyomidori, Okunoyama — landrace selections. Okumidori, Saemidori, Seimei — three actual crosses, and two of those three have an Uji landrace plant as a parent anyway. Seven of ten were individual bushes somebody noticed in a field. Six of the seven were noticed in Uji, four of those inside a single decade. Only one plant on the list, Seimei (2020), was deliberately bred with matcha in mind from the start.

In fact, Kyoto has never released a deliberately cross-bred tea cultivar. Every plant Kyoto ever put out is either a direct landrace selection or an open-pollinated seedling of one. Deliberate crossing only began at the Institute in 1998, and nothing from it has been released. So the whole prestige of Uji matcha rests on plants that were noticed, not designed. That is an astonishing achievement on a very small and largely accidental base. Read the other way, it is enormous unused headroom: nobody has ever really bred a matcha cultivar in Kyoto.

It gets less comfortable. Kyoto's own gardens are 49% Yabukita — a plant selected in Shizuoka, not Uji. So the honest sentence is not "premium matcha rests on Uji selections." It is "Japanese tea rests on one Shizuoka plant, and premium matcha rests on that plus a handful of 1950s Uji selections." And Japan's own government research bureau states plainly that Yabukita is a poor tencha plant — under shade its leaf does not turn a deep enough green and the plant is stressed. The national policy is to replant to better shade cultivars. Those cultivars mostly do not exist yet. Meanwhile about 38% of Japan's tea gardens are over 30 years old, near replanting age. Whatever goes into the ground in the next years is what matcha tastes like for the next half-century.

Two pressures make this urgent. First, climate. The intuitive guess is that a warmer Japan is a better Japan for tea. The measured record — 35 years of it, from the Institute in Uji — says the opposite. A warm March pulls the bud out early; a cold April frost then kills it. Warming does not move the frost risk out of the way, it moves the plant into it. And heat pushes tea chemistry toward more catechin and less theanine — a direct hit on the exact quality matcha is judged on. Shading, which tencha uses anyway, protects against strong light, but it does not protect against heat, and long-term shading raises the canopy temperature further. I will not overstate it — no one has measured how much of the loss shade offsets — but the direction is clear.

Second, money. The matcha boom is, right now, funding tencha at a scale the industry has never seen. Tencha production roughly tripled in eleven years — to about 6,300 tonnes in 2025 — and tencha leaf sells for around five times the sencha price. First-flush tencha prices roughly doubled year-on-year in Kagoshima in 2026. Almost all of that money is going into growing more of the existing plants. A small share of it, spent on breeding — for heat tolerance, disease resistance, theanine that holds under stress, and for once with tencha in mind rather than sencha — would be the highest-leverage spend in Japanese tea.

Because the obvious place to look for new traits is the population these plants came out of in the first place: the seed-grown, outcrossed, never-narrowed gene pool that has sat in this one valley for centuries. That is the pool we let fall from 150 hectares to 20. The Institute's scion garden, Horii's Oku-no-yama, the thousand seedlings behind Kōshōji — those are not heritage tourism. They are breeding stock. Their value is not that they are old. It is that they hold plant material no cultivar garden holds, because a cultivar garden is one plant repeated.

Uji found its first cultivars by walking its own fields and paying attention. The remarkable thing is not that it worked. It is that nobody has seriously tried it again — and that the fields are, just barely, still there to walk.
