Bizen ceramics look like earth that has learned to hold itself together. No glaze, no painting, no applied decoration. The surface of a Bizen piece is the result of two weeks of wood-firing at over 1300 °C — contact with fly ash, the influence of smoke and reduction atmosphere, the randomness of a flame no potter fully controls. What you see on a Bizen piece happened — it was not designed, applied, or planned.
That is not a philosophy. That is material logic.
Why Bizen needs no glaze: the clay chemistry
Bizen clay contains almost no feldspar — the mineral that melts at high temperatures and forms glaze-like surfaces. Without feldspar, no conventional glaze can develop. Instead: a dense, fine-grained clay body with a high iron content (around 3–5% Fe₂O₃) that, when sintered, produces a characteristic red to dark-brown shard.
The consequence: Bizen potters developed a fire aesthetic rather than a glaze aesthetic. Everything that makes the surface of a Bizen piece interesting emerges from the firing process. This was not a romantic decision in favour of nature — it was the inevitable consequence of a material that allowed no other options. Necessity became a principle.
The four surface effects: what you see on a Bizen piece
Anyone familiar with Bizen knows that no two pieces look alike — and at the same time knows which effects to expect:
Hidasuki (緋襷, "fire cord"): Reddish-orange lines and streaks that appear when rice straw is in direct contact with the clay during firing. The alkalis in the straw react with the iron oxide in the clay — creating a localised flux that shifts the colour. Hidasuki patterns are deliberately composed: the potter places the straw before the firing begins.
Goma (胡麻, "sesame"): Speckled, yellowish-green ash deposits on the surface, formed when wood ash from the firebox flies onto the hot piece and melts. The longer the firing, the more abundant the goma — in large anagama kilns with firing times of 10–14 days, thick layers of ash glaze can build up, creating a complete seal without any applied glaze.
Sangiri (桟切, "beam cut"): Grey to black markings that appear during rapid cooling in a reduction atmosphere — unburned carbon from the smoke settles into the still-open pores of the clay. The result looks almost ink-black and often forms sharp contrasts against the reddish ground.
Yohen (窯変, "kiln transformation"): The umbrella term for unexpected colour shifts caused by chance influences during firing — an unusually prolonged exposure to heat, a flame that lingers on one area longer than another. Yohen is considered the most fortunate thing that can happen to a Bizen piece.
The anagama kiln: 14 days, 1300 °C
Bizen is traditionally fired in an anagama (穴窯, "cave kiln") — a single-chamber wood-fired kiln dug into a hillside. Typical length: 5–15 metres; the fire is fed from the front, with heat and ash travelling through the kiln toward the rear chamber.
A complete Bizen firing takes 10–14 days at temperatures of 1250–1300 °C. The wood consumption is enormous: several cubic metres of pine. Control is relative: the potter manages air supply and fuel quantity, but the specific positional effects — which piece receives how much ash deposition — emerge from the dynamics of the firing itself, not from a plan.
This makes Bizen pieces fundamentally unrepeatable. Two jugs from the same batch of clay, placed side by side in the kiln, from the same hands, can look entirely different. A similar fire aesthetic is pursued in Hagi-yaki. This is why Bizen collectors buy individual pieces — not series.
The masters of Imbe: who makes Bizen today
The village of Imbe (伊部) in Okayama Prefecture is the centre of Bizen production — documented since the 10th century, with a peak in the 14th century (Nanbokucho period), when Bizen storage vessels and water jars were traded across Japan.
Two figures from the 20th century define the modern understanding of Bizen quality. For those new to tea culture, the Japanese tea overview is a good starting point: Kaneshige Toyo (1896–1967), who shaped the free, expressive form of modern Bizen and was designated the first Bizen potter to receive the title of Living National Treasure (Intangible Cultural Property) in 1956. And Fujiwara Yū (1898–1978), who in parallel stood for the preservation of historical firing techniques. Both left behind schools of students who today form the active Bizen community in Imbe.
Contemporary potters such as Isezaki Jun and Koie Ryoji — both Living National Treasure holders — are pushing Bizen in more expressive, sculptural directions. Their pieces are regularly sold at major Japanese auctions well into six-figure euro territory.
Buying Bizen: what makes a good piece
When buying a Bizen piece, it helps to understand this: there is no wrong colour, no incorrect pattern — as long as the piece is honest. For more on Japanese tea ceremony aesthetics, see the Chawan article. What does point to a technical problem:
— A crack in the body that is not decorative but weakens the wall: the clay was too wet or too dry.
— A glaze bubble: the clay had too much trapped air.
— A wall that is too thin without corresponding stability: Bizen is a heavy clay and needs mass.
What distinguishes a good Bizen piece: a balance between the reddish clay body and the surface effects; a foot ring (kōdai) that is cleanly cut and stable; a pleasant hand feel — Bizen surfaces are unglazed, but not rough. They are matte and agreeably textured, not scratchy.
Bizen for tea — as a Yunomi, Kyusu, or Chawan — has a particular quality: the porous, unglazed surface absorbs tea oils over time and changes its character. A Bizen Yunomi used daily looks different after ten years than it did on the first day — not worse. Pieces from our Cups & Bowls collection.
