The tea cultivar Yamakai has earned its nickname “natural Gyokuro” from being notably rich in umami, but its unique summery muskmelon notes are hidden gems that also deserves a fair share of attention. Steeping it in iced water will unleash its full potential by both extracting the umami to the maximum, while at the same time unfolding its distinct aromas.
