Our award-winning Gyokuro farmer selected these plants and propagated them himself, and it took him over ten years to bring them from the first selection to a harvestable field. Only a handful of producers in Japan work with white-leaf tea at all, because the pale leaf carries very little chlorophyll and the plants grow slowly. The low chlorophyll is also the reason for the taste: the leaf holds the high amino-acid content of a shaded tea, which is why this leaf type is locally called a natural Gyokuro.
